Papa Witecha's Corn Flake Chicken

Ingredients:

5-6 cups Corn Flakes

1 stick of butter (1/2 cup)

1/2 cup grated Parmesan cheese

1 packet Hidden Valley Ranch dried dressing

2lbs chicken breast, sliced into "fingers"

Preheat oven: 425 degrees

Steps:

In Ziploc Bag, add corn flakes and parmesan cheese. Seal bag and crush corn flakes to desired size.

In Microwave, melt butter. Remove from microwave and stir in dressing packet until completely dissolved.

Rinse chicken and pat dry with paper towel. Butter sticks better to dry chicken. Clean chicken, careful to remove any remaining feathers. Cut chicken into smaller peices. I like to make the size of chicken fingers.

Dump chicken into bowl with butter mixture.

Have a cookie sheet ready, preferably covered with foil or parchment paper, to minimize clean up later.

Take 1-2 pieces of chicken at a time and add to the Ziploc bag. Coat each piece with corn flake/parm mixture and place on cookie sheet.

Repeat the step above until all chicken is on the cookie sheet. You should be able to put all the chicken on one big cookie sheet, or in a 13x9 inch pan.

You may want to take any remaining crumbs and sprinkle them on top of the chicken.

Bake chicken at 425 for 20-25 minutes.

Best served with mashed potatoes and corn. Enjoy.
